Caldon Walker, a proud Galveston, Texas native, is known for her Southern savory meals and rich, homemade desserts. In 1975, Cal’s allergy to bananas inspired her to reimagine a classic dessert. She replaced bananas with fresh strawberries and pineapples, creating a bold and unforgettable twist on traditional banana pudding.

What began as a simple necessity quickly became a beloved family favorite. In 2020, her grandson Chad—the owner of Chad’s Large Lunch Box food truck—began sharing Cal’s pudding with his community in Houston and beyond.

Today, we proudly honor Cal’s creativity, resilience, and love for dessert with every cup we serve.
